A PASSIONATE FAMILY BUSINESS

Tenuta Elmata Societa Agricola A.R.L was founded in September 2020 by the Norwegian Paus family. Ellen Marie and William acquired a villa in Bibbona in 2017 and acquired additional land in 2020 and 2021.

The property is located in the municipality of Bibbona in the Tuscan province of Livorno. Close to the beautiful coast of the Mar Tirreno, Bibbona is the neighbour of the famous DOC of Bolgheri, known as the home of the "Super Tuscan", which means very high quality wines mainly based on a blend of Merlot, Cabernet Franc, Cabernet Sauvignon and Sangiovese. In Bibbona there is also the famous wine producer Biserno, belonging to the Antinori family.

Bibbona is a small municipality of 65 km2 with a population of only 3200 people. Very close to the cities Livorno, Pisa, Florence, Volterra and Lucca.

In total, Tenuta Elmata has about ten hectares of land. Three hectares of vineyards are already in production, additional two hectares of vines were planted in April and before summer 2024, giving us the total of five hectares. In addition a rented plot of high quality Sangiovese. The planted vinyards having the varieties of Merlot, Cabernet Sauvignon, Cabernet Franc, Sangiovese, Vermentino and Sauvignon Blanc, one can expect interesting new products to be released over the coming years. Each of the plots Nippi, La Ribelle and Colombaia have been named based on their personality and history.

Nippi, the plot from which we produced our first vintage, is located under the old mill of Bibbona. The label we chose for this bottle is a hand drawing of the mill itself from Nippi’s point of view. The other two plots, Colombia and La Ribelle, are beautifully located on top of the property’s hill with a breathtaking view of the Mediterranean Sea. You can see from the island Elba to Corsica and all the other islands of the Tuscan Archipelago, such as Capraia and Gorgona.

The property has also around three hundred olive trees and a fruit garden. We aim to utilize all resources we have and this is why we are producing fantastic olive oil and fruit marmalades according to ecological principles without any chemicals. We also only use natural fertilizers. The first vintage of Tenuta Elmata was the 2022 of the wine Nippi. This wine is based on Sangiovese (90%) and is blended with some percentages of Ciliegiolo, Cabernet Sauvignon and Merlot. Nippi 2022 did three months in stainless steel tank and then seven months in concrete tank. The aim was the produce an honest and fresh Sangiovese. A wine for many occasions and one “you just want another glass of”.

Tenuta Elmata is both a dream and a family business. We are investing for the future and we will, over the next years, bring a number of new wines to the market. We focus on quality and sustainability in all aspects of the business, so we are following the "Biologico" principles and are soon qualified to use this description on the bottles. We also believe in treating all our partners with respect and we want to be part of the local community. We always choose local suppliers if possible and we treat our employees and key partners as part of the family.

As far as the story goes, the Paus Family has built a strong and passionate Tenuta Elmata team. Our owner Ellen Marie Blakstad Paus is an artist educated at the National-Academy of the Arts in Norway. She is mainly working with graphical print making. She is also responsible for the brand building activities such as product design and profile in the external dimensions.

Naima Cantini, born as interpreter, is our Commercial Manager. She runs the all the day-to-day activities and coordinates with clients and partners both working in the fields and in the cellar. She is also responsible for sales and hospitality on the estate. 

Our Chief Agronomist is Mauro Carrara, who is an extremely experienced and well known person in the local wine ecosystem. He is advising on all activities and interventions in the vineyards and is an important discussion partner on how to develop the property in an optimal way.

 Nicoló Carrara is our winemaker, an experienced and renowned enologist from Bolgheri. Nicoló is responsible for all activities and interventions in the cellar and an important advisor to the owner William Paus on the composition and design of the wines.

  • Colombaia Plot

    The Colombaia

    The "Colombaia" plot is beautifully located facing west towards the Mediterranean Sea. The soil is optimal for vines and the sea breeze and sun exposure makes this plot one of the most beautiful and attractive in the area. The vines on the plot are Merlot, Cabernet Franc and Cabernet Sauvignon. The vineyard was planted the 15th of April 2021 and the first vintage from this plot is expected to be 2023.

  • La Ribelle

    La Ribelle

    "La Ribelle" is the neighbour of "Colombaia" , it is also facing the Sea and has a very nice sea breeze. We have planted Sauvignon Blanc on this plot, which is somehow rebellious. Our founder is extremely focused on producing a fresh and attractive white wine and it is stubborn in his view that Sauvignon Blanc is representing the perfect base. The vines were planted the 8th of April 2022 and the first vintage is expected to be in 2024.

  • The Nippi

    "Nippi" is located 2 kilometers from the Villa, close to the famous old mill of Bibbona. This area is extremely beautiful and has a breathtaking view of Casale Marittimo, the old town of Bibbona, the old mill of Bibbona and has the beautiful hills of "Magona" in the back. The Nippi plot is around 4,5 Hectares and has currently slightly more than one hectare of 10 to 15 years old vines. We have a mix of Sangiovese and Vermentino. The first vintage of wine from this plot is 2022. Nippi is based on Sangiovese and has a small percentqge of other grapes such as Cabernt Sauvignon and Ciliegiolo.

Our filosophy for the NIPPI is to create an easy approchable characteristic red wine respecting the heart and soul of Tuscany.

Nippi is a Sangiovese based wine which means an uncomplicated, but well structured wine and invites you to drink another glass. We have blended in a small procentage of other local grapes, but we have given the Sangiovese the space to dominate. This leaves you with a sympatic and fruit driven companion to both spicy dishes, meat and vegetables, and typical cold cuts from the region.

This first ever release comes in 750ml, 1500ml and a signed and a numbered limited edition of one hundered 3000ml bottles.

  • Sangiovese is a sensitive grape that takes on different stylistic expressions based on where it grows. This region of Sangiovese gives you the primary falvours of red berries, roasted tomatos and oregano.

  • The high acidity and fruitiness in this wine make it versatile with a wide variety of vegetable and spice-driven foods; think tomato, red pepper, and just about anything grilled.

Olio di Tenuta Elmata

  • 0.5 l of excellent olive oil from the Tenuta Elmata plot in Bibbona, Tuscany. Beautifully situated on the slope up from the Mediterranean, the olive trees on the Elmata farm have optimal conditions.

  • William Paus

    FOUNDER AND OWNER

    William Paus, founder and owner, is a Norwegian banker with a long international career. He is a member of the group executive committee of Skandinaviska Enskilda Banken in Stockholm and has held several senior positions in Norway, Sweden, Germany and in Asia. He holds a Master of Science from the University of Mannheim in Germany. He is also the owner of the investment company Coolhead Capital, where the family is invested in a number of businesses ranging from wine and beverage imports, media productions focused on entertainment for kids to production of biological fertilizers based on food waste.

  • Ellen Marie Blakstad Paus

    FOUNDER AND OWNER

    Ellen Marie Blakstad Paus, founder and owner, is from Norway and is working as an artist. She is educated at the Norwegian National Academy of the Arts and specialized on graphical print making. She also has a background within Marketing and Communications. She has been living and working in Norway, Sweden, Germany and Singapore.

    PRODUCT DEVELOPMENT MANAGER

    Nikolai W. Blakstad Paus, born 1997 holds a Bachelor's degree in Molecular Biology from the University of Bergen. He is currently studying Business at BI Norwegian Business School. Nikolai also work as a logistics manager at Wastech AS and CEO of the start-up company Algena AS.

    Mathias Blakstad Paus, born 2000 is studying International Business Management on Heriot Watt University.

  • Naima Cantini

    COMMERCIAL MANAGER

    Naima Cantini is our Commercial Manager and responsible for the day-to-day coordination of the activities. She is also in charge of all hospitality events on the estate and sales and marketing of the products marketed by Tenuta Elmata. Naima is a certified translator and has a broad commercial background.

  • Mauro Dott. Carrara

    AGRONOMIST

    Mauro Dott. Carrara is our Agronomist and Responsible of coordinating all agricultural process and activities. Teacher and consultant, he is inscribed to the order of Agronomists since 1978. Experiences and consultancies all over Tuscany and most of all in the area of Bolgheri. 'The creation of a wine starts on the field', philosophy he passed to his son, Nicolò.

  • Nicolò Carrara

    WINEMAKER

    Nicolò Carrara is our Winemaker and Responsible for coordinating all activities concerning the winemaking. He has a degree in Enology and Viticulture achieved at the Univeristà degli Studi di Pisa. With experiences in Sicily, France, Australia and all over Italy, he is a very renown and appreciated winemaker in Bolgheri.

    André is a civil engineer and holds a WSET Level 3 degree in Wine and operate as our export manger. André also run Bricks Beverages AS in Norway and work close with many producers in the region.
