NIPPI
Toscana Rosso
Explore the Tenuta Elmata, NIPPI - a true Sangiovese Toscana Rosso. Our philosophy for the NIPPI is to create an easy approachable characteristic red wine respecting the heart and soul of Tuscany. Nippi is a Sangiovese based wine which means an uncomplicated, but well structured wine. In the first vintage (2022) we blended in a small percentage of other local grapes, but we have given the Sangiovese the space to dominate. From the 2023 vintage we are keeping the Sangiovese dominance and are blending inn 5% each of our fantastic Merlot, Cabernet Sauvignon and Cabernet Franc grapes from the breathtaking Colombaia plot close to the Villa. This leaves you with a sympathetic and fruit driven companion to both spicy dishes, meat and vegetables, and typical cold cuts from the region.
Vinification
Fermented in stainless steel tanks for 3 months. Sangiovese 7 months in concrete tanks. Cabernet Franc, cabernet sauvignon and merlot 7 months in second passage french oak barriques

Grapes harveste by hand and preselction in vineyards. 85% Sangiovese, 5% Cabernet Sauvignon, 5% Cabernet Franc, 5% Merlot

LA RIBELLE
Toscana Bianco
LA RIBELLE - Our crisp white wine.
The name ‘La Ribelle’ hints at the slightly unconventional grape Sauvignon Blanc here in Tuscany, and translates to “Female Rebel” in Italian, this wine is the rebellious sister wine in the Tenuta Elmata bunch. We wanted to create something unique combining one of our favourite grapes with traditional and beloved Vermentino. Additionally, we wanted to tribute all strong women worldwide in our own way.
Vinification
Each variety had fermentations in stainless steel tank, after being separated from skins Vermentino and Sauvignon blanc are blended together. 5 months in stainless steel tanks in total.

Introducing ELMATA - our elegant Super Tuscan. Capturing the beauty of our vineyards in one bottle. ELMATA is a sophisticated, full bodied, and delicious red wine. Elmata is a super Tuscan, which in our case means that we have used a fabulous blend of the Bordeaux grapes Cabernet Franc, Cabernet Sauvignon, and Merlot here in Bibbona to create the masterpiece that is Elmata
Vinification
Fermented in stainless steel tanks for 3 months. Maturation: 7 months in second passage French oak barriqus. Bottle ageing for 8 months.
